Protein cookies

Ingredients: 250 grams peanut butter 120 grams (⅔ cup) coconut sugar 1 egg 55 grams (½ cup) vanilla protein powder

Method: Heat the oven to 350°F (180°C). Paper a baking sheet. Combine all ingredients in a large bowl.

Make 12 balls of the mixture and place on the lined baking sheet. Press each ball into a cookie.

Place the tray in the heated oven and bake the cookies for 12–14 minutes until the edges brown.

Remove from the oven, lay the baking sheet on a wire rack, and let the cookies cool fully.
