What to do Warm the air fryer up to 360°. Cut potatoes into very thin slices with a mandoline or a veggie peeler. Put it in a big bowl and cover it with enough ice water. Soak for 15 minutes and then drain. It's time to soak for another 15 minutes. Add more ice water.

Pat potatoes dry with towels after draining. Season potatoes with salt and frying spray. Place potato slices in a single layer on a greased air-fryer basket tray in batches. Stir and turn every 5-7 minutes until crisp and golden brown, 15-17 minutes. Sprinkle parsley if desired.
